One of my favorite easy and healthy meals is avocado microgreens toast. It’s wonderful as a light meal that can be prepared in a snap. I will make this often during busy days, and this crunchy avocado perfection is incredibly satisfying. As a variation I add fresh minced garlic and red onion to the mashed avocado, and in the summer months fresh heirloom tomato slices from my garden.
My favorite (mostly organic) bread comes from a wonderful bakery in Florida called Sami’s Bakery. Yes, I order this online and it is shipped north all the way to Connecticut! I’ll get several loaves and freeze them to use as needed. I’ve included the link below if you are interested in their wonderful breads and other bakery items (including gluten free varieties). To me, the shipping cost is worth every penny. But of course use your own favorite whole grain bread of choice. Here’s my simple recipe:
2 Slices Sami’s Bakery Millet & Flax Bread (toasted)
1/2 Avocado
1 tsp Fresh Squeezed Lemon Juice
Dash of Herbamare (herbed seasoning sea salt) or Sea Salt
Assorted Micro Greens (generous heaping)
Scoop out the avocado into a small bowl (save the other half of the avocado for another meal). Add the lemon juice and salt then mash together using a fork. Spoon onto the toasted bread and top with micro greens. That’s it! So quick and easy yet seriously decadent.
Today I used a wonderful microgreen blend found at my local organic grocery store (New Morning Market). Use any microgreens you like and garnish them generously atop of the avocado. I love incorporating microgreens into my meals as much as possible, because they add so much nutritional benefit. They are incredibly nutrient dense with concentrated sources of vitamins, minerals, and antioxidants.
For a quick lunch, I will put together this avocado toast recipe along with my favorite Elderflower Herbal Tea. Mmmm pure deliciousness!
